Celebrating the Jubilee with a traditional British Dish


A curiously British Dish, I have been unable to find much like this anywhere else. Scotch eggs are a savoury delight and a traditional treat. It is a delicious snack consisting of a boiled egg, encased in Sausage Meat, covered in breadcrumbs and deep fried. And they are delicious.

I thought of them the other night: I don’t know what brought them to mind, but once I decided I wanted
them, the craving was just not going away. But I knew, for sure, I didn’t want a refrigerated shop bought
effort. The crispy coating ruined by refrigeration, the sausage meat bland and cheap.

These are not the things my late night food – fancies are made of.

A Scotch egg should use good quality sausage meat, a good, large free range egg all encased in a crispy
coating. But I don’t have a deep fryer. ( I know what would happen to the size of my thighs if I did, so I have steadfastly held out for years. The size of my thighs are still an issue, but at least I can’t blame a fryer.) These little beauties are baked in the oven making them a much healthier alternative, without losing any flavor.

You’ll thank me for these, I promise.

Mrs M’s Scotch Eggs

Ingredients:
1lb. (450g) Sausage meat (or split the skins of your favourite sausages and use that)
8 medium – large free range eggs
75g breadcrumbs
¼ teaspoon Allspice
A pinch of mixed herbs (or whatever herb takes your fancy. Sage is good. )
Salt and pepper
A couple of tablespoons of flour for dredging.

Directions:
1. Boil 7 eggs for 12 minutes, cool and peel.
2. Mix herbs and seasoning with sausage meat.
3. Coat egg in Sausage meat
4. Dip rolled egg in flour, then beaten egg, then breadcrumbs.
5. Cook in Oven at 190 degrees for 30 minutes, turning once.
