Fudgey Brownies

2 sticks Butter, plus some for greasing the pan
1 C granulated sugar
1 C brown sugar
4 eggs
1 Tbsp strong, fresh brewed coffee
1 C cocoa, plus some for dusting the pan
1/2 C unbleached all purpose flour


Preheat oven to 300 degrees. Butter an 8x8 pan and dust with cocoa.

Melt butter; add sugars and stir very well, then add in coffee. Once this mixture reaches room temperature, add eggs and beat until fluffy. Sift in cocoa, flour, and salt. Blend until smooth.

Pour batter into prepared pan and bake for about an hour. Brownies are done when a toothpick comes out a little wet but batter doesn't jiggle anymore. They may seem very wet at first but will firm up to the perfect consistency once cooled.
