The other night I made Mashed Potato Soup (sunnyvegan). I didn't like it as much, but my dad did.
1 tbs olive oil
1 tbs earth balance
1 white onion
2 stalks parsley
3 cups leftover mashed potatoes (I just mashed 3 potatoes)
3 cups vegetable broth (i had to use chicken broth)
chives, salt and pepper
saute onion and celery in olive oil and earth balance over medium until soft and translucent. add mashed potatoes and broth, gently stir to mix.
Along with that, I made an amazing Avocado salad from Fitness Magazine
1 can black bean
1 avocado dices
1/4 cup Cotija cheese, crumbled (Mexican section- feta as a replacement)
1/4 cup cilantro
lime juice
chili powder
combine all ingredients and serve
My parents made this again the next night to put on tostadas
