Ingredients:
6 of boneless skinless Chicken thighs
1 cup freshly shredded cheddar cheese
4 oz. cream cheese
0.5 lbs of fresh white mushrooms
6 slices of thick cut bacon
2 medium cauliflower heads
4 tbsp of full fat ranch
Pepper and salt to taste
Directions:
- Preheat the oven 370F
- Pull cream cheese out of the fridge
- Cook bacon in the pan. You don't have to cook it all the way.
- Separate Cauliflower into florets and pan in bacon grease for 4 min on each side
- Chop up chicken into cube-sized pieces, add salt, pepper, and pan fry it until cooked
- Pan fry mushrooms until they are cooked
- Mix chicken, cauliflower, mushrooms, cream cheese, and ranch
- Top it with cheddar cheese
- Cook in the oven for 25-30 minutes
