Ingredients:
- 3 eggs
- 1 cup of chopped zucchini
- 1 beef hot dog (2 oz or 50g), cut into small cubes
- A little white pepper
- 1 tsp of parsley
- 1 cup of cheddar cheese
- A little salt
- 5 tbsp of olive oil
- 1 baking powder (1 tbsp)
Preparation:
Preheat the oven to 356°F or 180°C.
Arrange cupcake papers in a baking pan for muffins and set aside.
- Separate the egg yolks from the egg whites in two mixing bowls and whisk egg whites with a mixer until they become sturdy (3-5 minutes). Set aside.
- Add separated eggs yolks in a mixing bowl, add cheese, zucchini and hot dog, oil, baking powder and spices and mix it until all ingredients are well combined.
- With a wooden spoon gently stir whisked eggs whites to unite the batter (it will become fluffy).
- Pour batter into a prepared pan but leave enough space for the growth of muffins.
- Bake for about 20 minutes or you can check if muffins are baked by inserting a wooden pick in the centers of muffins and if it comes out clean they are baked. Cool in a pan on a wire rack for 5 minutes before removing from pan to rack.
