peanut toffee bars

i like to always have something small to snack at home. usually i prefer something savory (a piece of bread will do just fine), but it can also be something sweet. i really like the super chewy muesli bars, but since i do need to change it up every once in a while, i made Peanut Toffee Bars (recipe from deli). they don’t contain sugar per se, as they are sweetned by the bananas, but don’t get your hopes up too soon, they still aren’t too healthy. toffee isn’t made out of nothing and in this case soft toffee candies are used. nonetheless they are still rather on the “good side”

ingredients (12 bars)

  • 2 bananas
  • juice and grated peel of 1/2 oragnic lemon
  • 100 g soft caramel/toffee candies
  • 100 g roasted and salted peanuts
  • 60 g fine oats
  • 40 g spelt flakes (oats are ok too)
  • optional: fleur de sel

pre-heat oven to 180° degrees. line baking tray with baking paper.

peel bananas, squash with a fork. mix in lemon juice and peel. chop candies medium fine, peanuts roughly.

mix candies, peanuts, oats and flakes with the banana puree and knead thoroughly. divide mixture into 12 portions. form each into a 8x3x1 cm bar and place on baking tray. if you want sprinkle with fleur de sel. bake in hot oven on middle rack for about 20 min until golden brown.

take out of oven and let cool down. stored airtight and cool they keep about 2 weeks.
