MIXED FRUIT JAM

Step by step guide to making home made Jam  its soft, spreadable and absolutely delicious - they are gorgeous handmade gifts. So, lets get started.

Ingredients:
  • Mixed Fruit - 1 kg (Strawberries, Pear,Apple,Plums &    Peaches)
  •       Sugar - 1kg
  •       Lemon Juice - 2 tablespoon
  •       Cinnamon powder - 2 teaspoon
  •       Butter - 4 teaspoons
  •       Water - 200ml
  •       Salt - two pinch
  •       Jam setta (fruit pectin) - 1 packet
Method:
  • Wash and sterilise jars and lids.
  • Wash, dry and then dice the fruits into 1/2 inch pieces
  • Place the fruits in the saucepan and add water and let home boil until the fruit is soft.
  • Use the blender or the potato masher to mash the fruits to a smooth pulp
  • Add sugar, jamsetta, lemon juice, cinnamon powder and salt and let it boil for 10-15 mins.
  • Remove from heat and skim off any excess scum and then stir a knob of butter across the surface (this helps to dissolve any remaining scum)
  • Leave for about 5-10mins so that the fruit can settle.
  • Pour in sterilised jars and seal them tight.

Note: In this jam I have used Strawberries, Apple, Pears, Plums & Peaches. You could follow the same recipe for other jams too. I have made Plums Jam, Pineapple Jam, Apple Jam Mango Jam and Strawberry Jam.
If you prefer to make Jam using just strawberries which is my favourite the same recipe can be followed. You could adjust the sugar based on the sweetness of the fruit.

Tip: While checking the doneness of the jam, if the sugar starts to re-crystallize, reheat the jam and increase the amount of lemon juice. The lemon juice inverts the sugar, thus preventing it from re crystallisation.

I have conducted jam making classes in Brunswick Melbourne.
