Spicy Chickpea Wraps

Spicy oven roasted Chickpeas all wrapped up in a flour tortilla with fresh spinach leaves. These Spicy Chickpea Wraps are a healthy meal that is perfect for packed lunches or picnics. They can be served warm or cold, and either way they still taste great. Chickpeas are a healthy protein fueled food, making it the perfect filling for a healthy vegan wrap. Since the chickpeas and spinach are both naturally gluten-free, to make these wraps gluten-free replace flour tortillas for either lettuce leaves  or a gluten-free brand of tortillas. Serve with your favorite chips or fries.

Drained canned chickpeas are mixed with olive oil and seasonings. Both ground cumin and chili powder are used to give the chickpeas a spicy flavor. Spread the chickpea mixture out into a baking dish and roast in the oven until crispy. You can either serve the chickpeas right away in the tortillas with fresh spinach. Or you can store the chickpeas into an airtight container for up to one week, and serve the wraps cold. Either way you serve them, these wraps make a great light summer meal.

Spicy Chickpea Wraps

  • 1 ( 15 oz.) can chickpeas, drained
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Fresh spinach leaves
  • 4 flour tortillas
  1. Preheat oven to 400 F. Combine drained chickpeas with olive oil, salt, pepper, ground cumin and chili powder. Spread chickpeas out into a baking dish. Bake for 20-25 minutes.

  2. Place spinach leaves onto each tortilla. Add roasted chickpeas and roll into a wrap.
