Almond Butter Oatmeal Raisin Bites

Healthy bite sized snacks that you can easily grab and go. These Almond Butter oatmeal raisin bites are packed full of protein from the almond butter and oats. Raisins are added to give you a serving of fruit and provide more fiber into your diet. These bites are also made with ground flax seeds, giving you even more of a health boost. No baking is involved, you can prepare these bites in less than 10 minutes. Store them in an airtight container for up to two weeks. They are the perfect size for packed lunches or for snacks on the go.

I used almond butter instead of peanut butter because I prefer the taste of almond butter with raisins. But if you would rather, you can substitute the almond butter for peanut butter or any other nut based butter. To sweeten the bites without sugar, agave nectar or maple syrup is added. To help them keep there shape, ground flax seed and equal parts water are used to create a vegan egg substitute. Old-fashioned oats is mixed with the almond butter, ground flax seed, agave nectar, cinnamon and raisins in a large bowl. To form the mixture into balls, I found the easiest way to do this is to use a large cookie scoop and to place the balls onto plates. Refrigerate for at least 30 minutes, or until the bites are set. Store in an airtight container in the refrigerator.

Almond Butter Oatmeal Raisin Bites

  • 1 1/2 cups old-fashioned oats
  • 1/4 cup ground flaxseed
  • 1/4 cup water
  • 1/2 cup almond butter
  • 1 cup rasins
  • 1/4 cup agave nectar or maple syrup
  • 1 teaspoon ground cinnamon
  1. In a large bowl, combine all ingredients together. Using a cookie scoop, form mixture into small balls.

  2. Place bites onto a plate and refrigerate for at least 30 minutes, or until set. Store in an air tight container for up to two weeks.
