Sugar Free Strawberry Flavoured Cake Bites


“Let’s bake mummy!” What else is there to do on a miserable Sunday morning? So off to the kitchen we went. I’ve found some pretty cool silicone moulds lately so of course Demi was insistent we use them and only them.
I was perusing the Coles hot chocolate powders looking for a low carb one to satisfy the craving I’ve had lately and I saw a strawberry one that also had ground beetroot powder in there. I assume it was for colour. Reading the nutrition facts I saw it was super low in sugar and sodium so I was willing to give it to the kids. They love drinking milk so I thought we could use it as a special treat from time to time.
This was literally months ago, and as I was cleaning out my cupboard the other day I came across the barely touched can of it. Demi spotted the bright pink lid and asked what it was, and after reading the expiry date to make sure it was still good, I told her. She put some in her milk and absolutely loved it, then promptly said we needed to use it to bake with. She remembered when we next entered the kitchen and that powder was the basis of our cakes.
Throw in a couple of our favourite ingredients along with the cool moulds and voila! Our cute little cake bites were born. Being a Sunday, we were low in just about everything, hence the mix of flours we used. You can keep this recipe completely white or completely wholemeal and it will still work too.
You may also notice we used star moulds that didn’t seem to end up in our finished product photo. That would be because the corners of the stars burnt and we overfilled our tray, leading to very rounded bottomed stars. Learn from our mistakes, don’t use star moulds without keeping a very close eye on them!
Regardless, these cake bites were a huge success and were gone within days. And a big bonus, they’re lunchbox friendly too!

Sugar Free Strawberry Flavoured Cake Bites
Ingredients
1/4 of a cup of plain white flour
3/4 of a cup of wholemeal plain flour
1 tsp of baking powder
1/4 of a cup of Sugar Free Strawberry Drinking Mix (We used Avalanche Kids, sweetened with stevia)
1 tsp of vanilla extract
1/4 of a cup of melted unsalted butter
1/2 a cup of full cream milk
1 egg

*Makes 47 mini cake bites

Method
1. In the microwave melt your butter until it is liquid.
2. In a large mixing bowl combine all your ingredients until a smooth, wet batter forms.

3. Spoon the mixture directly into your silicone moulds *see notes. Don’t overfill them, there will be a slight rise.


4. Bake at 180°c for 6-10 minutes.
5. Allow them to cool slightly before popping them out of their moulds. Finish cooling them on a wire rack.

So cute, so simple and so good for you. A perfect little treat for adults and kids alike that even sneaks in a bit of extra veg!

Notes
*This recipe would work just fine as is if you used mini cupcake trays too. Just make sure you grease your tin first.
