Ginger Oat Cookies

A little while ago Leon had a sore tummy and wasn’t eating much of anything for a few days. Not majorly out of character for him, but enough so for me to start worrying about him. I racked my brain, thinking of something he would manage to keep down. Then inspiration struck, make him a Cookie and load it with tummy soothing things that was still good for him. Try and replenish him from the inside. The answer was obvious, ginger and honey! I threw in some oats and as little butter as possible and success! He ate them, kept them down and with some fuel finally in his belly he started to feel better.
This turned out a short, crunchy cookie that even the non sick ones in the family very much enjoyed munching on. These have since been made as a movie night treat, and have been requested to be made as a school holiday bake.
So if you have a stomach bug, or just want a healthier ginger cookie, these are definitely worth a try.

Ginger Oat Cookies
Ingredients
1 cup of ground rolled oats
1/3 of a cup of unsalted melted butter
1 tbls of honey
1 tsp of ground ginger

*Makes 6 standard cookies

Method
1. Preheat the oven to 180°c.
2. In the food processor add the oats and grind until a flour like consistency forms.
3. Transfer into a large mixing bowl with all the other ingredients and mix with a rubber spatula until a dough comes together.
4. Roll out the dough into six golf ball sized balls and then press out on the tray. How they look now is how they’ll stay ince baked.

5. Bake for 8-10 minutes or until the edges of the cookies start to brown.
6. Cool on a wire rack.

Simple, quick and easy. A bit of extra fibre than a standard ginger cookie this is a great base recipe to have on hand. Jazz it up with a bit of a chocolate drizzle, or serve with some fresh berries. Perfect for young and old!
