Low Sugar Chocolate and Vanilla Marble Cake

This week my little lady started school. She’s taken to it like a fish in water but has remained adament that we will continue to add to our blog regularly.
Along with Demi starting prep, Leon has returned to daycare, much to his disdain. So tonight marks the return of our regular Wednesday movie night. Don’t get me wrong, movie nights were still had over the Christmas break, but tonight is the first of our regular tradition.
Leon was so miserable this morning I asked him what special movie night snack he wanted us to bake and he said a chocolate cake. It was at this point that Demi jumped in and said we should try making a marble cake like what we’d seen on TV recently. Having never made one before I was nervous to try it, but the show we’d seen the other day made it look easy. And it was! Demi managed this one on her own again, this team of ours is fast becoming the Head Chef Daughter and Sous Chef Mother Baking Team.
When she reached straight for the wholemeal flour and stevia, my heart melted. When I asked if she realized that was the healthy sugar, as she calls it, she said, ‘Yes, I know. It tastes the same and it comes from a plant so it’s better for you”. No chance was I going to argue with that.
Recently we’ve garnered a lot of new followers so to celebrate I bought her a new apron, and she’s been itching to get in the kitchen and cook something so she could wear it.

In our true style we have kept this marble cake lighter and healthier than your average cake but that in no way compromises on the flavour. Miss Demi has truly outdone herself this time in flavour and presentation, and movie night had been made just that much more special because of her hard work.

Low Sugar Chocolate and Vanilla Marble Cake
Chocolate Cake Ingredients
1 cup of wholemeal self raising flour
1 tsp of baking powder
1 egg
1/3 of a cup of milk
1 heaped tbls of natural yoghurt
1/3 of a cup of softened unsalted butter
1 tsp of raw honey
1 tsp of vanilla extract
1/4 of a cup of stevia powder
2 tbls of cacao powder
Pinch of coffee (to enhance the chocolate flavour)

Vanilla Cake Ingredients
1 cup of wholemeal self raising flour
1 tsp of baking powder
1 egg
1/3 of a cup of milk
1 heaped tbls of natural yoghurt
1/3 of a cup of softened unsalted butter
1 tsp of raw honey
2 tsp of vanilla extract
1/4 of a cup of stevia powder

Cuts into 10 pieces

Method
1. Preheat the oven to 200°c.
2. In two seperate mixing bowls add each individual cake recipe so you have one bowl of chocolate batter and one bowl of vanilla batter. An electric mixer would be fine but Demi wanted to use her new Frozen spatula and mixed by hand until smooth batters formed.


3. Grease and line a standard 22cm springform pan and add your cake batters, one layer directly on top of the other.


4. Using a knife, start swirling the batters together. Using an upwards motion to bring the bottom layer up, twist the knife around until you are happy with the way the swirl looks.


5. Bake for 20-25 minutes or until a toothpick inserted into the cake comes out clean.
6. Allow it to cool slightly before removing it from the tin and finish cooling it on a rack.

And there you have this visually super pretty, moist and fluffy cake. It’s not overly sweet so if you want a sweet cake, add extra honey. But honestly, this cake came out perfectly for every member of this family in its sweetness and texture. The marble effect gives it that wow factor we all look for in a dessert and whether you’re entertaining or just want something that bit nicer for a treat one night it’s definitely worth trying this cake.
