Fruity Oat Slice


About a week ago Demi came with me to the supermarket and spotted the pears when we walked through the fresh produce. She swore she loved pears, but I knew full well she only ate them when there was no other option. But she begged and pleaded for them so I relented and bought three. She ate precisely one. So I’ve had two pears sitting in my fruit bowl that no one wanted to eat.
Nothing bothers me more than wasted food, so when everyone was sleeping last night I decided to bake and use up these pears and the strawberries in my freezer. I was originally going to make breakfast cookies but the batter was quite wet so decided to do a cake. My cake pans were all right at the back of the cupboard, but my loaf tin was front and centre. So Fruity Oat Slice it was! I was glad to use up the leftover fruit and the kids were glad to not eat cereal again for breakfast.

Fruity Oat Slice
Ingredients
1 1/2 cups of ground up oats
1/4 of a cup of desicated coconut
1/4 of a cup of milk
1/4 of a cup of melted butter
2 pears, diced with the skin on
5 strawberries, chopped

Method
1. Preheat the oven to 200°c.
2. Grind up the oats in a food processor until a flour like consistency forms.
3. Chop the pears and strawberries while the butter melts in the microwave. It took about 30 seconds.
4. Combine all the ingredients in a bowl either by hand or an electronic mixer until a wet batter forms.

5. Grease and line a standard 20×10cm loaf pan and pour the batter in, smoothing the top with the back of a rubber spatula. Make sure there is an overhang of bakinf paper so you can remove the loaf easily later.
5. Bake for 20-25 minutes or until a toothpick inserted into various parts of the loaf comes out clean.
6. Allow it to cool in the pan before removing.

Great served warm or cold, this is an incredibly easy way to use up any kind of uneaten fruit. A fabulous breakfast or snack, this is a good base recipe you can play around with and adjust to your tastes.
Needless to say, next time Demi asks for pears, I’m only buying one.

Nutrition facts based on a slightly bigger than average sized piece as my kids ate it as a meal.
