Low Carb Sugar Free Baked Cinnamon Donuts

Tonight is movie night in this house. Every Wednesday we eat an early dinner and sit on the couch together and watch a movie. So every Wednesday afternoon I’m in the kitchen making movie approriate snacks.
Since I went to the supermarket on Monday and saw the cinammon donuts front and centre in the bakery section, I swear calling out my name, I haven’t stopped thinking about them. I just can’t bring myself to buy the sugar loaded, deep fried dough and not feel super guilty about it. So tonight’s snack was a real no brainer, I was going to try my hand at healthy cinammon donuts to satisfy the nagging voice in my head.
Demi and I have made enough donuts in our time for us to have a good base recipe. I added some cinammon to the mix and all I can say is Oh My! They are truly one of the best donuts we’ve ever made. They literally taste like the real thing! My husband didn’t believe me when I said they were baked, flourless and sugar free.
These are so incredibly tasty, next time you walk past a bakery and spot those cute little donuts, keep walking and make these! You won’t regret it.

Low Carb Sugar Free Baked Cinnamon Donuts
Donut Ingredients
1 cup of almond meal
1 tsp of baking powder
1 tsp of cinammon
1 egg
1 tsp of stevia
1/4 of a cup of milk
1/3 of a cup of melted butter
1 tsp of vanilla extract

For the Cinammon Dusting
2 tsps of cinnamon
1 tsp of stevia
2 tbls of melted butter

Method
1. Preheat the oven to 180°c.
2. Melt the butter in the microwave and combine all the donut ingredients in a large mixing bowl. I did it by hand but an electric mixer will be fine too.
3. Spoon the donut batter into pre-greased donut pans until they are roughly 3/4 full. They will rise slightly so don’t overfill.

4. Bake for 14-16 minutes or until a toothpick inserted into the centre comes out clean.
5. Allow to cool on a wire rack.

Meanwhile, make your cinammon dusting.
6. Melt the butter until it is liquid.
7. Mix together the cinammon and stevia until it is combined. It won’t look like much but you don’t need much.

8. Using a pastry brush, brush the butter onto both sides of the donut and then either roll or sprinkle it on the donut. I started out rolling but didn’t like how uneven it looked because I have a swirl in my donut pan. I ended up liberally sprinkling.
Like all cakes they’re best served warm, but are still delicious cool.

And that’s it! Quick, super easy, and I promise they taste like the real thing! Super yummy but so much better for you.
