Bacon Roasted Green Beans and Potatoes

Bacon Roasted Green Beans and Potatoes are an all-time favorite summer time side dish of ours. We always have plenty of green beans from the garden on hand, it takes only minutes to prepare, and the bacon crisps and flavors the vegetables perfectly.

There’s too many spreading wings around here for this mama bird to handle. Now Elliot’s a bonafide preschooler, Finn’s started kindergarten, Nolan’s in 4th, and Clara…I can’t even…a middle schooler. Ew. Hate it.

The toughest pill to swallow has been Clara’s middle school status. I’m entering unchartered parental waters. My unfamiliarity, plus lack of glowing anecdotes about adolescent girls, makes me very apprehensive. Am I inevitably doomed?

Clara’s always been exceptionaly sweet, selfless, accommodating, and open, so years of surly, disheartening behavior seems inconceivable. (This is where I’d like to take credit for all the legwork I put into turning out such an extraordinary human being. Thank you. The time and effort was non-existent because she was born with a personality far superior to mine truly extensive). Do hormones just come along and take a big, fat dump on all that delightfullness?

Not only am I concerned about the Gremlin she may morph into, but what about all the other hellions she’s forced to associate with now? I don’t know these cats or what kind of racket they run. Until properly vetted, I’m assuming they’re all foul-mouthed, delinquent heathens. Best to just stay away.

So far I’ve dodged my biggest fear as a parent – to suffer through raising my childhood self. I was boy-crazy, awful to my parents, overly concerned with my appearance, and so troubled by what people thought of me. In other words, I was the delinquent heathen I’m fearful of Clara fraternizing with. Naturally I’m bracing myself for payback.

The new school year also brings back the witching hour. This is when children arrive home from school and concentrate all their needs into one hellish hour. They come spewing papers, information, stories, homework, papers to be signed, all the while expecting snacks. Any zen gained from their day-long absence instantly vanishes once the tired, hungry, and needy kids crash in.

Unfavorably dinner must be started at this time too, which sucks because I’m extremely tired, hungry, and needy. Good times all around. Mindless and hands-off recipes, such as Bacon Roasted Potatoes and Green Beans make the magic happen. Somehow everyone needs to be fed, and I’m the point person.

Growing up, my mom made a dish similar to this with our garden green beans. She boiled the veggies, fried the bacon, and used the drippings to flavor the beans and potatoes. To save the extra steps and dishes to wash, I decided to roast the veggies directly with the bacon. The potatoes and beans are crisp, there are less dishes to clean, and your stove is saved from bacon grease splatters. See, Mom, I’m making your life so much easier now! Isn’t payback great?

How to Make Bacon Roasted Green Beans and Potatoes:

Bacon Roasted Green Beans and Potatoes is an effortless side dish that only takes minutes to prepare and yields perfectly crisp and flavorful vegetables.

Ingredients
  • 2 lbs. small gold or red potatoes, quartered
  • 6 slices bacon, chopped
  • 1 medium onion, largely chopped
  • 1½ lbs. fresh green beans
  • 1 tsp. kosher salt
  • freshly ground pepper
Instructions
  1. Preheat oven to 425ºF. On two baking sheets place potatoes, bacon, and onions (leave out green beans for now). Toss and then spread evenly on pans, with potatoes cut side down. Bake for 15 minutes.

  2. Remove from oven, divide green beans between pans, toss, and spread evenly (putting other cut side of potato down on pan) Bake 15 more minutes, or until potatoes are crisp and beans are roasted. Remove from oven and toss with salt and pepper.
