Thai Rice Soup with Chicken
    Servings4 servings
    Prep Time25 minutes
    Cook Time40 minutes
    Ingredients
    • 1/2cup medium-grain rice
    • 1tablespoon vegetable oil
    • 1large clove garlicfinely chopped
    • 1.5inch piece of gingerfinely grated
    • 8oz chicken thigh or breastdiced
    • white pepper
    • 2tablespoons fish sauce
    • 1small onionfinely sliced
    • 1/4cup fresh cilantrochopped
    • 2each green onionschopped
    • 1each red chilifinely chopped
    Instructions
    1. Place rice in a large saucepan with 8 cups of water and bring to a boil slowly. Simmer gently, adding more water as necessary so that mixture takes on a think porridge consistency.
    2. In a wok or large frying pan, heat the oil and stir-fry the garlic and ginger. Add the chicken, pepper, and fish sauce. Add the onion and stir-fry until chicken is cooked, about 5 minutes. Stir into the rice.
    3. Just before serving stir in the cilantro and green onions. Ladle into heated bowls and garnish with chilies and a few extra cilantro leaves and sliced green onions.
