Heirloom Caprese

Heirloom Caprese Salad. Fresh Basil, Sliced Mozzarella and Heirloom Tomatoes drizzled with a balsamic vinegar reduction.

If you grow tomatoes you know how plenty the harvest can be. A friend brought in his heirloom tomatoes to share. I knew exactly what I was going to do with them. I had fresh basil out back in the garden and fresh mozzarella in fridge. These heirloom tomatoes tasted amazing on their own but the balsamic reduction just set them off.  The golden sunburst tomato was my favorite. The golden sunburst will definitely be going in my garden next year. Fresh basil right out of the garden is the best. You can’t beat it. I grow basil every year. It is a staple in my kitchen garden. This variety is a sweet basil and it is the recommended basil for a Caprese salad. This is such a fresh and simple salad perfect for Summer days.

Slice the tomatoes and layer them on a plate with fresh sliced mozzarella. Add fresh leaves of basil for a stunning spread of color and flavor. The riper the tomatoes the better. Drizzle a balsamic reduction over the Caprese Salad. Add cracked pepper and salt to taste. Pure Perfection!

Serve on small plates with a fork and knife. Have a basket of warm sliced Italian bread and soft butter to accompany the Heirloom Caprese. It is a great appetizer for wine night or even served as a light dinner option.

To make the balsamic vinegar reduction heat vinegar over medium high heat. It will boil and should reduce by half in 20 minutes. Remove from heat and allow the balsamic reduction to cool before drizzling over the tomatoes and mozzarella.

Recipe for Heirloom Caprese Salad with a Balsamic Reduction

Heirloom Caprese

Ingredients

  • Variety of heirloom tomatoes, sliced.
  • Sliced mozzarella
  • Fresh basil leaves
  • 1 cup balsamic vinegar
  • Salt and pepper to taste.

Instructions

  1. Heat balsamic vinegar over medium high heat for about 20 minutes or until the vinegar has reduced by half. Set aside and let cool.
  2. Layer tomatoes, mozzarella and basil.
  3. Drizzle balsamic vinegar reduction over the salad
  4. Salt and pepper to taste and serve.
