Whole 30 2: Day 17

Another new breakfast this morning! I haven’t had scrambled eggs with Smoked Salmon for a long time, and after 3 tries I managed to find one smoked salmon without sugar. I cooked some scallions in ghee then started to cook the eggs before crumbling in the smoked salmon. I topped the whole mix off with more scallions. I wish I had remembered to used my everything but the bagel seasoning!

Mangoes looked so gorgeous at the grocery store yesterday! I didn’t have a plan with them, but I ended up making some Tuna Salad with homemade mayonnaise. I also picked up some coconut wraps, which I never had before. I thought they would taste too coconutty which is why I never bought them before. I knew I needed to add some novelty to keep up with my Whole 30 goals, and this sort of ingredient tends to help me.

They did have a coconut flavor but tasted amazing with tuna salad. They were slightly chewy, reminiscent of flour tortillas.

I had dinner with my boyfriend at Stark’s Steakhouse and Seafood in Santa Rosa. I wanted wine with my steak, and kept sniffing my boyfriend’s glass of merlot. I ended up getting a flat iron steak and adding some Salsa Verde on the side. I also had the broccolini, but I asked if I could have it steamed instead of the garnishes it came with. I tossed the broccoli with some of the salsa verde, which was absolutely delicious—I was expecting it to be more like a tomatillo salsa, but it was a mixture of different herbs, garlic, and chilies. We also had an order of grilled mussels on the side but I skipped putting butter on them and used some lemon juice instead.
