Kanchkolar Kofta Curry

Kanchkolar Kofta Curry is my today’s recipe and it’most common and traditional recipe. Koftas in general are like many other introductions to Bengali cuisine. Vegetarian recipe for “Kanchkolar Kofta Curry” is very tasty and mouth freshener also. Curry is yummy. We mostly have it on our veg days.

Raw Banana (Plantain) cannot be eaten without cooking though belongs to the banana family.The green banana is a good source of fiber, vitamins and minerals, and contains a starch that may help control blood sugar, manage weight and lower blood cholesterol levels. It is a good source of potassium and vitamins like A and C.

INGREDIENTS
  • 2 Raw Banana (Kanch Kola)
  • 1 medium size boiled Potato (Aloo)
  • ½ tsp Turmeric powder
  • 2 tsp Dry roast powder
  • ¼ tsp kalo Jira
  • 12 to 16 Cashew Nuts (kaju) Paste
  • 16-18 Raisins (Kishmish) Paste
  • 2 tsp Dried Melon Seeds (Charmagaz) Paste
  • Salt as per taste
  • Sugar as per taste
  • 2 tbsp Refine Oil
  • 1 tsp Ghee

TIME REQUIRED : Less than 30 minutes

PROCEDURE

STEP 1

Dry roast all spice (Cumin seeds/Jira, Coriander seeds/Dhone, Feenal seeds/Mauri, White Peeper/Sada marich, Dry Chili, Cardamom/Elach, Cinnamon stick/Daruchini) and then grind them into a fine powder.

STEP 2

Peeled raw banana and boiled in pressure cooker with some turmeric powder and water. Then mash them with boiled Potato.

STEP 3

Add all spice roasted powder in the Raw Banana mixture and mix very well.

STEP 4

Add Raisins, salt and sugar mix gently.

STEP 5

Make small Vada’s from the mixture and keep aside.

STEP 6

Now fry the Vada’s in hot oil on medium flame till they are brown. Drain from oil and keep aside.

STEP 7

Now hot some ghee in the pan and add Kalo Jira.

STEP 8

When starts to splutter add (Cashew nut, Raisins and Dried Melon Seeds) paste and sauté.

STEP 9

Sauté till oil comes from sides of the pan then add some salt and sugar and stir the mix.

STEP 10

Add 1/3 cup of water and bring it to boil.

STEP 11

Add fried kofta and boil for 1-2 minutes. Now Kanchkolar Kofta Curry is ready to serve.
