So, you’re ready to make the switch? Meat isn’t all it’s cracked up to be anyway. Mushrooms, on the other hand, are quite special. Aside from their delightfully meaty texture and versatility, they are undeniably nutritious. Mushrooms are excellent sources of dietary fiber, protein, and an extensive list of vitamins and minerals including vitamin C, potassium, niacin, and the very important vitamin D. They sound tempting, right? Here are 4 tasty ideas to replace meat with mushrooms.

Mushroom Philly Cheesesteak Sandwiches

This meat-free play on the popular sandwich is downright delicious. Grab a few hoagie rolls, about 4 cups of sliced cremini mushrooms, a few slices of provolone cheese, slice an onion, green bell pepper and heat about a tablespoon of oil in a large pan. When the oil is hot, sauté the mushrooms and onions, add some salt, black pepper and soy sauce for flavor, follow with the garlic and sliced bell peppers. Cook while stirring until the mushrooms are tender. Then, place cheese over the “cheesesteak” mixture, melt and build your sandwiches.

Portobello Steaks with Balsamic Reduction

This is the meat with mushrooms replacement idea to turn to when you need something to pair with that nice red you’ve been saving. You know, the one for the special occasion that will probably never happen? To make the steaks, simply clean a few portobellos, brush with oil, season with salt, black pepper and whatever else you’re craving that day. Once done, grill on an actual grill or a grill pan for about 4 minutes per side or until tender. As for the balsamic reduction, add about 1 cup of balsamic vinegar to a saucepan along with a minced garlic clove, bring to a gentle boil, reduce to a simmer and let it reduce for about 10 minutes or until reduced by half. When the reduction is ready, drizzle over the steaks.

Cremini Mushroom Nuggets with Spicy Ketchup

Yes, mushrooms can replace your beloved chicken nuggets. Cremini mushroom nuggets boast a deep savory flavor, the exterior crunch further enhances that flavor and the spicy ketchup adds a little heat to keep the palate wanting more. To make them, clean about a pound of creminis with a damp cloth, cut and discard the bases, dip in an egg wash, coat with breadcrumbs, and fry in vegetable oil until golden brown and crisp. As for the spicy ketchup, add your favorite hot sauce to some ketchup and stir. Then all there’s left to do is dip and eat!

Mushroom Taco Meat

First, slice up some mushrooms before chopping them in a food processor until you have small pieces that resemble ground beef. Once done, add the mushrooms to a large dry skillet and cook over medium-low. There’s no need to add any fat or liquid since the mushrooms release so much liquid as they cook down.  Once cooked about halfway, add some salt, pepper and taco seasoning, mix and continue to cook for another 5 minutes or so before assembling your tacos.
