my favorite vegan christmas desserts




hey cuties!

i’ve never really been a fan of animal and dairy products. and moving to my very first own apartment has chnged my diet a lot. over the last half a year i’ve tried to avoid buying the animal and dairy products as much as possible and i've found so many amazing Vegan products.

to be honest here, the Christmas season is mostly all about chocolates, christmas cookies and all kinds of other Christmas dishes. in prior years I haven’t really thought about vegan subtitutes for Christmas dishes since there are no vegans/vegetarians in our family and it always felt so natural that we all had a lovely homemade Christmas dinner together (except that i never really ate the meat). but recently i’ve became more and more interested in plant based diets and subtitutes for animal and dairy products.

so here are three of my favorite vegan Christmas desserts i decided to try out this year:

1. easy vegan gingerbread cookies from elephantasticvegan ’s blog



this recipe was probably the easiest cookie recipe i’ve ever tried so far. they’re a lot lighter looking than the regular gingerbread cookies but in my opinion they taste just like the real thing (if not even better !!) and i’m one of those people who usually doesn’t like cookie dough but this vegan gingerbread cookie dough was absolutely delicious !!

Ingredients:
  • 1 2/3 cup / 210g white flour
  • 1/2 cup / 110g white sugar (make sure it's vegan!)
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon powder
  • 1/2 teaspoon ginger powder
  • 2 tablespoons maple syrup
  • 1/8 cup / 30ml almond milk (or any other plant-based milk)
  • 1/4 cup / 70g cold vegan butter

Instructions

  • Combine the dry ingredients: flour, sugar, baking powder, cinnamon powder, and ginger powder. Give it a quick whisk. Add in the maple syrup, vegan butter (cut in small pieces) and almond milk. Mix and knead with your hands until it's a smooth dough. If it's too sticky, feel free to add more flour. (mine, however, turned out a little too flour-y so i had to add more milk)
  • Cover the dough in plastic wrap and put it in the fridge for at least 30 minutes (the dough should be cold when you roll it out). Meanwhile pre-heat the oven to 350°F/180°C.
  • Roll out the dough on a floured surface and cut out cookies with a cookie cutter until all the dough is used up. Transfer them on a baking sheet and bake them in the oven for about 10 minutes. They are quite soft when fresh out of the oven but they will harden once cooled, so let them cool off completely, before munching them or decorating them further.


2. vegan chocolate peppermint crinckle cookies from mydarlingvegan ’s blog



If you love chocolate then this recipe is for you ! these all-vegan chocolate peppermint cookies taste like a sweet christmas-y chocolate fairytale. 

Ingredients:

 The cookies
  • 2 cups / 250g all-purpose flour
  •  teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup / 85g cocoa powder (make sure it's vegan !)
  • 2 cups / 400g sugar
  • ½ cup / 110ml vegetable oil
  • ¾ cup / 185ml applesauce
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 1 tbsp peppermint candies, crushed (optional)
Sugar Coating
  • ½ cup / 100g granulated sugar
  • ½ cup / 60g powdered sugar

Instructions: 

  1. In a small bowl combine flour, salt, and baking powder. Set aside.
  2. In a medium bowl stir together cocoa powder, sugar, applesauce, oil, extracts, and peppermint candies (if using) until well blended. Add flour mixture and mix until just combined.
  3. Wrap the dough in plastic wrap and chill for 4 hours.
  4. Preheat the oven to 350°F/180°C. Place the granulated and powdered sugars in two separate bowls.
  5. Remove chilled dough and roll into balls about one tablespoon each. Toss first in the granulated and then second in the powdered sugar, coating fully.
  6. Bake for 12-13 minutes (cookies should be slightly underbaked). Remove from oven and allow to cool for 2-3 minutes before transferring onto a wire rack to cool completely


3. last but not least, my all time favorite, vegan cocoa with vegan whipped cream


this is my must have drink on the Christmas season. it's basically just like regular hot cocoa with regular whipped cream but instead of regular milk, i use almond milk and instead of regular whipped cream, i use vegan soy whipped cream. both of these ingredients should be found in any bigger grocery store.
