Honey Soy Garlic Stir Fry

I love stir fry dinners, especially on the nights when you just need something quick, easy ‘no fuss’. I always cook once and eat twice (at least twice!). Whether you’re vegan or not, this recipe is only a handful of ingredients and is the perfect balance of protein, loads of veggies and a good amount of healthy fats.

I used to be a sucker for the stir fry packets with the frozen sauce included. Except they always have tonnes of sugar, preservatives and other junk that you really don’t need to bring into your body! It really is absolutely no extra work if you get a good frozen packet of veggies (without the sauce sachet) and add in your own flavouring, from ingredients you’ve probably already got in the fridge and pantry anyway.

If you have never successfully eaten with chop sticks, there’s no better time to try than when chowing down on some gorgeous asian veggies! Eating with chop sticks (especially if you’re not a pro at it) is a great way to SLOW DOWN your eating, which is a huge part of eating mindfully and in tune with your own body. Recipe: Honey Soy Garlic Stir Fry

Ingredients

  • 2 skinless chicken breast or 1/2 block tofu
  • 1 large onion, chopped
  • Large bag of frozen oriental stir fry veggies
  • 2-3 small pan choy, diced
  • handful of raw cashews
  • 1 tbsp coconut oil
  • 2 cloves garlic, crushed
  • 2 tbsp honey (or rice malt syrup if strict vegan)
  • 2 tbsp tamari (gluten-free soy sauce)

Method:

  1. Heat coconut oil in a large wok and cook chicken (or tofu) until browned.
  2. Toss in everything else, mixing through so that all veggies/chicken is coated in juice. Cook over medium heat until veggies are cooked to your liking.
  3. May be served alone or over rice, quinoa or millet to make it stretch further. Enjoy!
