Chocolate Paleo Pancakes (Grain Free)

What is a paleo-pacake?

These pancakes are different from my keto pancakes because they contain no dairy, have a slightly higher carb count, and use cassava flour in place of nut flours. These paleo pancakes have no nuts, dairy freegluten-free, and are low in refined sugar.

What is cassava flour?

Cassava flour, also known as the yuca plant, is a flour made from the cassava root. It is grain-free and is made by grinding it. It is also naturally gluten-free.

Cassava flour has a texture similar to traditional wheat flour, making it a great substitute for gluten-free and anti-inflammatory baking.

Cassava flour has a higher carb count than other grains free flours (almond and coconut), but it still falls within the category of low carb foods.


What texture does this cassava flour pancake have?

These chocolate paleo-friendly pancakes have a smoother texture than regular pancakes. These cassava flour pancakes are smoother than my fluffy keto pancakes made with almond flour.

How do these chocolate paleo pancakes taste?

These pancakes are a little like semi-sweet chocolate muffins by themselves. These pancakes are rich but not too sweet. They have a chocolatey taste and a chewy texture (replacing gluten).

They’re not dry, eggy, crumbly or have that strange protein powder taste!

The recipe is simple, my children loved it and it’s free from inflammatory ingredients such as sugar, gluten and refined carbs. They taste great and don’t make it feel like I’m eating healthy food. They are full of healthy ingredients that keep me full and fuel my body.

These paleo pancakes are easy to make

This batter is easy to prepare because it doesn’t contain gluten. You have two options: either you can mix the ingredients by hand or use a food processor to blend them. I prefer the former.

Cook the pancakes in a nonstick skillet on medium heat.

Place a generous amount of batter in the skillet. Spread it evenly with the back of a spoon. Flip the skillet and continue cooking for 30-60 seconds.

The batter should make approximately 12 small/silverdollar-sized pancakes.

Ideas for topping your chocolate pancakes

There are many ways to top chocolate protein pancakes, depending on your preferences and dietary requirements. These are some of my favorite toppings:

Natural peanut butter and sliced bananas (as seen) Sliced strawberries and a drizzle of pure maple syrup. Fresh whipped cream, diced strawberries.

Ingredients

1 cup cassava flour 4 spoons Additional Food Chocolate Collagen Products 1/4 cup sweetener choice 1 tablespoon unsweetened cacao powder 1 teaspoon baking powder pinch salt 1.25 cups almondmilk (or preferred milk), 3 eggs 1/2 teaspoon vanilla extract

Instructions

Combine all ingredients in a large bowl until smooth. You can also use a food processor to blend the ingredients until smooth. You can also use a food processor to blend the batter until smooth. Flip the batter and continue cooking until it is firm.

Notes

You can store leftovers at room temperature or in a refrigerator. They should be consumed within 24 hours, but leftovers can be stored for up to 5 days.
