Easy and Healthy Cottage Pie: A Budget-Friendly Recipe

Cottage pie (shepherd’s pie) is an easy casserole recipe to make with a hearty filling of layered vegetables and seasoned Ground Beef topped with a glorious high cloud of fluffy mashed potatoes and cheese. This family favorite is a satisfying, comforting main dish that also is a thrifty and nutritious meal idea for using leftover mashed potatoes as well as incorporating extra vegetables you may have in the refrigerator. Ingredients for What You’ll Need

olive oil
potatoes
thyme leaves
rosemary
Worcestershire sauce
black pepper
ground beef
Cheddar cheese
1 can of cream-style corn (14.75 oz.)
1 can of peas (15 oz.)
onion

Healthy Cottage Pie

3 tablespoons of olive oil
5 cups of mashed potatoes
½ cups of finely chopped onion
1 teaspoon of thyme leaves
½ teaspoons of rosemary
1 tablespoon of Worcestershire sauce
1/4 teaspoon of black pepper
1 lb. of ground beef
3/4 cup of grated Cheddar cheese
1 can of cream-style of corn (14.75 oz.)
1 can of peas, drained (15 oz.)
3/4 teaspoons of salt (optional)

  1. Brown the ground beef in the olive oil and drain off any excess grease.
  2. Add the chopped onion to the skillet and brown until golden.
  3. Season the cooked mixture with thyme, rosemary, black pepper, Worcestershire sauce, and optional salt if you prefer.
  4. Line the bottom of a 10-inch pie pan with some of the mashed potatoes like you’re doing when making a pie.
  5. Sprinkle ½ cups of the grated Cheddar cheese over the mashed potatoes in the pie pan next.
  6. Spread the seasoned ground beef mixture into lined pie.
  7. Pour the can of creamed corn over the meat.
  8. Next, spread the drained can of peas over the layer of creamed corn.
  9. Top the pie with the rest of the mashed potatoes.
  10. Sprinkle on the remaining one-fourth cup of Cheddar cheese on the top of the mashed potatoes.
  11. Bake in a 350-degree oven for about 30-35 minutes until thoroughly heated through.
