Sour Cream Chocolate Cake
3 cups of flour
2 teaspoons of baking soda, leveled
2 teaspoons of vanilla
2 cups of sugar
1 cup of unsweetened cocoa
1 cup of strong coffee, cool
1 cup of thick sour cream
2 large eggs
1 cup of canola oil
Deep Chocolate Frosting
2 cups of confectioners’ sugar
½ cups of unsweetened cocoa
1/4 cup of milk + 1 tablespoon
1 teaspoon of vanilla
1/4 cup of butter, softened
To Make the Cake:
Mix and beat together: the eggs, oil, sugar, vanilla, cool coffee, and sour cream in a large mixing bowl.
In another mixing bowl, sift together the flour, cocoa and baking soda.
Add a little of the moist ingredients to the dry, alternating between the two as you go and mix thoroughly until well combined.
Pour into a well-greased 13 x 9 x 2″ baking pan.
Bake in a 350-degree oven for about 35-40 minutes, depending on how your oven is regulated.
Test with a cake tester, slender knife or toothpick to see if anything sticks determining doneness.
Cool thoroughly before icing.
