How to Make a Healthy White Bean Spread (With Extra Cheese Protein)

As a healthy replacement for meatless protein, I cook a lot with many different varieties of legumes. This white Bean Spread has extra protein from cottage cheese, Swiss cheese, and Velveeta or American cheese with turmeric and a bit of tang from lemon juice and sour cream for a delicious twist.

White Bean Spread

2 cups of cooked white beans (Northern or Navy), drained
1 teaspoon of lemon juice
1/4 cup of sour cream
1/4 cup of cottage cheese
1 cup of grated Swiss cheese
1 cup of Velveeta or American Cheese, cubed
1/4 teaspoon of turmeric
3/4 teaspoon of salt
1/8 teaspoon of cayenne pepper

Add your choice of white beans (Northern or Navy), drained whether cooked from dry beans or from a can to your food processor or blender along with the ingredients.

Mix the ingredients until smooth and creamy.

Store in a covered glass container in your refrigerator.

Serve with chips, crackers or flatbread.
