How to Make Easy and Healthy Chickpea Patties for Dinner

I cook a lot of meatless meals using beans and legumes such as this recipe for chickpea (garbanzo) Patties. You may be shocked at how delicious or simple these patties are with cottage cheese, cornmeal, onion, spices, and saltine crackers when looking for something different, inexpensive and satisfying to make for dinner that will please even the pickiest eaters.

Besides all the money you’ll save using this recipe, your health will benefit. After all, this particular legume is a great nutritious source of protein, fiber, carbohydrate, B vitamins, and minerals to keep blood sugar levels from spiking to help with those with type 2 diabetes. As interesting as that is, chickpeas also have a special soluble fiber called raffinose that helps keep the bowel regular and lower inflammation in the colon. You’ll gain a flatter tummy and feel fuller longer for controlling weight. If you’re watching your cholesterol, chickpeas have sitosterol (a plant sterol) that can help block its absorption and reduce those levels, which another reason to love garbanzo beans.

How can anyone not love how easy these chickpea bean cakes are to prepare? You hardly have much to do besides opening a can, crushing the crackers, chopping a bit of onion before assembling and frying.

You’ll turn them over once they start browning slightly at the bottom. If they break apart, no problem. All that you need is using your spoon or spatula to push them together again to adhere.

Chickpea Patties

1 can (15.5 oz.) garbanzo beans, drained and mashed
3 tablespoons of finely chopped onion
7 saltine crackers, crushed
1/4 cup of cottage cheese
3 tablespoons of cornmeal
1 teaspoon of baking powder, leveled
½ teaspoons of salt
½ teaspoons of celery seed
1/4 teaspoon of powdered sage
2 large eggs
4 tablespoons of extra virgin olive oil (for frying)
1 teaspoon of lemon juice

Mix together all the ingredients except for the olive oil.

Pour the olive oil in your frying pan and heat before frying your chickpea patties. Drop by the tablespoon into the hot oil.

Shape into four bean cakes from this recipe. However, you can make them smaller.

Turn them over once they start browning slightly at the bottom. If they break apart, no problem. All that you need is to use your spoon or spatula to push them together again to adhere.

Cook until golden brown.
