My Apple Bundt Cake Is Moist and One Recipe You Should Try If You Love Apples

Apples are so plentiful during the Fall season and at their best prices. Therefore, I like to bake with them more and take advantage of the sales to make scrumptious cakes, pies, cookies, and apples and rice pudding. Today, I want to share a delicious apple bundt cake that is moist and chalked full of diced apples and coconut making this recipe so wonderful with a hot cup of coffee.

This cake recipe is another easy one to bake just like all my other recipes. As you know if you read me regularly is that I hate complicated recipes with tons of steps or expensive gourmet ingredients. What you find here is simple and as inexpensive ones as I can manage while being incredibly tasty.

My apple bundt cake uses baking soda. If you ever had trouble with sour spots in your cake, then here is a tip how to avoid this. What I do is sift my dry ingredients together instead of adding the baking soda by itself. This definitely will prevent that sourness in your baked goods.

Also, you may be tempted to just use a regular teaspoon. However, it is important to use a measuring spoon when using baking soda or baking powder because more or even less does affect how the recipe turns out. I just wanted you to keep this in mind.

Some people prefer a glaze over their cake, but I like just to sprinkle a light dusting of confectioners’ sugar over it. This cake is sweet enough and really that extra sweetness from a thicker glaze would be overkill in my opinion.

Apple Bundt Cake

2 cups of sugar
1 cup of canola oil
3 large eggs
3 cups of flour
1 teaspoon of baking soda, leveled
1 teaspoon of salt
2 teaspoons of vanilla
3 cups of finely diced apples
3/4 cup of grated coconut
confectioners’ sugar to sprinkle over the top

Mix oil, sugar and eggs with your electric mixer in a large mixing bowl until well blended.

Next, sift together the flour, baking soda and salt. Slowly incorporate the flour mixture with the blended oil, sugar and eggs.

Stir in vanilla before gently stirring in the diced apples and grated coconut. You will need to use a wooden spoon because the mixture is rather thick for your electric mixture to handle.

Pour into a greased tube or bundt cake pan.

Bake in a 350-degree oven for about one hour and 15 minutes, depending on how your oven is regulated. Test with a toothpick, cake tester or slender knife to see if anything sticks.

Let it cool briefly in the pan about five to seven minutes before trying to remove it.

Serve plain or dust with a sprinkling of confectioners’ sugar.
