So here's a fun fact about me, I have a raging sweet tooth, like the most raging of sweet tooths (I'm eating moose tracks ice cream as I type this). And because my raging sweet tooth rears its sugar-craving head... well basically all of the time, but sometimes it's worse than others, and sometimes (albeit, not often) I don't have ice-cream in the house, I have to have a handful of quick, go-to recipes to satisfy my all-powerful sweet-tooth. Or I suppose I could try and fight it, but this way I get cookies, so I think I'll stick with this way. So anyways, a couple of days ago I woke up with the most ridiculous craving for cookies, so naturally, I made peanut-butter cookies at 9am.
In order to make these delicious morsels of sweet peanut-buttery heaven, you will need four things.
1 cup of Peanut-butter
1 large Egg
1 cup of Sugar
1 teaspoon of Vanilla Extract
annnnnnnnnd that's it. It doesn't get much easier than that.
Step One: Mix peanut butter, egg, sugar, and vanilla in a large bowl until combined
Step Two: Shape dough into 1 inch balls and place 1 inch apart on a greased baking sheet
Step Three: Gently flatten cookies in a cross-hatch pattern with the tines of a fork (I dip the fork in sugar each time I press down for a little extra sweetness)
Step Four: Bake at 325 degrees for 15 minutes or until light golden brown. Remove from baking sheet and place on wire racks to cool.
Step Five: ENJOY!!
