Right up front for y'all: I'm not a food blogger haha! I only say that to start off with because my pictures are probably not what you'd expect from a food blogger. I just wanted to share this recipe I made last night for dinner - Chicken Tortilla Casserole! There are so many things you could do with this casserole.
The really great thing about this casserole is that it is completely customizable. You can add whatever you want, change the amount of anything, or the type, and it's all to taste! Here's the ingredients I use when making my casserole:
Shredded chicken
Can of tomatoes and chilies
Can of Fiesta Nacho Cheese soup
Jar of taco sauce
Shredded cheese
Tortillas
Tortilla strips
How you can customize:
add beans, black olives, jalapenos
Use enchilada sauce in place of taco sauce
Use different types of shredded cheese
First off, I combined the shredded chicken, soup, tomato and chilies, half the jar of taco sauce and a handful of shredded cheese - dumped it all in a bowl and mixed it all up. Once it was mixed up really good, I tore up four tortilla shells into a bunch of smaller pieces.
So this is how it's put together... a layer of two tortillas worth of pieces, half the chicken and sauce mixture, then a layer of cheese. I do this twice. To customize, you could do three layers or only one!
Once I layered everything twice, I put it in the oven, preheated to 375, for 20 minutes. Basically you just need to make sure the cheese is all melty and gooey and stuff is bubbling. While it's still bubbling, throw some tortilla strips on top. To customize, you could make you own tortilla strips out of some of the tortillas!
A close-up for good measure. I'm not sure where I got this recipe. I kind of tossed it together once day many years ago, and it's kind of stuck around. I've varied it a few times through the years, but I usually stick pretty close to what I've talked about here. Mostly because my husband is kind of picky, and he doesn't like a lot of stuff in food.
