WEEKLY TOP 5: HEALTHY EASTER TREATS

Happy Easter, wherever you are! I´ve had a lovely relaxing weekend, starting off with an overnight country escape to a spa hotel, followed by gathering with friends, and tonight we´re off to Venice! In celebration of Easter, I wanted to share with you my favourite healthy raw chocolates and recipes, which I guarantee, taste just as good as the naughtier versions… Enjoy!


1. RAW HALO CHOCOLATE BARS 

These Raw Chocolate bars from Raw Halo are the most delicious and creamy treats are organic, refined sugar free, gluten-free and made from 100% natural Peruvian raw chocolate ingredients. I´m obsessed.


 2. CHOCOLATE CASHEW MYLK 

I love this creamy and chocolatey drink because it´s such a guilt-free indulgence; tasting great on it´s own with some ice, added into a smoothie or heated up for a more comforting version.

Ingredients:

Makes 1 l

1 l filtered water, 2 dl soaked and rinsed cashew nuts, 6 pitted dates, 3-4 tsp raw cacao, 2 tsp raw vanilla powder or essence (the latter has a more intense flavour), 1 tsp cinnamon, 1 tsp maca, 1 tsp lucuma, 1 tsp carob & a pinch of himalayan salt

Directions:

Soak the nuts for at least 4 hours, preferably overnight. Discard the water and rinse nuts well in cold, filtered water. Add to blender along with the water and dates and blend completely. Cover a bowl with a nut mylk bag and pour the liquid into it. Gather the bag and squeeze to extract the all drops of mylk. Rinse the blender slightly, pour the milk back into it, add all the remaining ingredients and blend thoroughly. Pour into an air-tight glass bottle, store in the fridge up to four days. 


3. RAW CHOCOLATE & COCONUT ENERGY BALLS 

Want to fight those afternoon cravings or want easy and healthy treats when you´re on-the-go? These delicious raw balls will not only conquer your sweet tooth, they will fill you up and give you lots of energy!

Ingredients:

Makes 12-15 balls

1 cup of medjool dates, 2 ½ cups of almonds, 1 tbsp coconut oil, 1 tbsp chia seeds, 2 tbsp raw cacao, 1 tbsp maca powder & 2 tbsp desiccated coconut 

Directions:

Use a food processor (a high speed blender can work too) – then just throw all the ingredients in the mixer, and blend for 2-3 minutes (until they´re doughy and smooth). Scoop out the mix, roll the balls and dip them onto a plate of desiccated coconut. Make sure you pop them in the fridge, and they´ll last for a good week. Simples!


4. OMBAR RAW CHOCOLATE COCO MYLK BUTTONS

Another great raw chocolate (which also sell bars) from Ombar. But my favourite is their Coco Mylk Buttons, made from the healthiest ingredients such as unrefined coconut sugar, real fruit and live cultures. Yum!


5. RAW CHOCOLATE MOUSSE 

I love this creamy and rich mousse, which is amy ultimate fail-safe dish at dinner parties (I love seeing peoples reaction when I tell them there is avocado in it!).

Ingredients:

Serves 2

1 large ripe avocado, 3 tbsp raw cacao powder, 2 medjool dates, 1 tbsp coconut water, raw vanilla powder or raw vanilla essence & a tiny pinch of himalayan salt. 

Directions:

Simply put all the ingredients into a food processor or blender, and mix until you´ve got a smooth texture. I like to keep it in the fridge so it´s nice and chilled. Serve with whatever toppings you prefer – I like fresh berries and banana!
