Vegan Basics : Rainbow Island (BLUE Recipes)

Today is Blue day. That means today we celebrate the ones who are loyal and trustworthy. The ones who are the rocks in other people's lives. You are the wise ones who typically know a little more. You  are calm and truthful, let's celebrate you.



Oh, and since leaves never turn blue for a reason (there's a long, scientific spiel for that), and there are pretty much zip foods that are naturally "blue" besides Blueberries... I've simply included blueberries in every meal today in honor of the blue people. (And no, not the Avatar people.)

Because blue people deserve to be appreciated. Do you have that empathic friend that you always call when you're in a troubling situation? You run to their cool and collected self, and they give your their advice. They are the ones that calm you down in the midst of your personal chaos, and they are the steadfast friends who are forever by your side.


BLUE verse: "Our God will fulfill every desire for goodness and the work of faith." 2 Thessalonians 1:11


If you are blue, you are the one that people can always have faith in, and you can carry on your own goodness and faith.
Perpetuate the tranquil vibe that you gift people with, and share the friendship that you are so great at offering. You are the understanding and supportive friend that anyone would be lucky to have.

Breakfast - Blueberry Carob Granola

Process 3/4 cup blueberries and 1/4 cup deglet noor dates (7-8) into a jam. Set aside.
In a pan, on medium-to-high heat, put in 1 cup oats, 1/4 cup coconut sugar, and 2 tablespoons of carob powder. Mix.
Gradually lump in compote. Use a spatula to press and disperse the jam. Repeat until it is all used up.
Keep flipping and toasting until you reach the desired texture.
SO GOOD. And the perfect snack for when you're on the go.



Lunch - Blueberry Rice Pudding

I didn't use exact measurements. But, I did cook in a Rice cooker one cup sweet rice and one cup regular rice, then added as much of that as I was hungry for into a pot. Pour in blueberries. Cover with hot water, and place on stovetop to boil. Lump a heaping tablespoon into the mixture, and stir until thick.
Put in bowl and serve! I had mine with more blueberries and some buckwheat groats. And molasses. Yum.


Dinner - Fruit Muesli with Blueberries

I tried blueberry pancakes. It was a great idea in theory, only, I forgot I was terrible at pancakes. It ended up a burnt mess that I had to chuck. ):
Anywho, this was delicious so no hurt feelings. Take fruits of your choice (I used blueberries and strawberries and mangoes), chop up, and mix with raw oats (I used 2/3 of a cup).
Next, blend up some banana mylk (just bananas and water) and pour it over your bowl. NOMS.
