Ingredients
  1. 200g Frozen prawns
  2. 6-8 Sundried tomatoes, roughly chopped
  3. 2 teaspoons of unsalted butter
  4. 2 cloves of garlic, crushed
  5. 2 teaspoons of green pesto
  6. Juice of 1 lemon
  7. Salt
  8. Black pepper
  9. 100g wholeweat linguine
  10. Parmesan for serving (optional)
Instructions
  1. Begin to cook the linguine following packet instructions. This will take roughly 10-12 minutes.
  2. Meanwhile, prepare your sundried tomatoes and garlic. Then fry the garlic and sundried tomatoes with the butter on a medium to high heat for a few moments until the aromas of garlic are released.
  3. Add the frozen prawns, pesto, lemon juice (minding the pips), a pinch of salt and a sprinkling of black pepper.
  4. Reduce the heat and cook until the prawns done (roughly 5 minutes). Add a splash of the starchy linguine water for extra flavour.
  5. Once the spaghetti is cooked, drain it and toss it in among the prawns and other ingredients.
  6. Serve immediately with a sprinkling of parmesan cheese if desired. Enjoy!
