The racing sim Project Cars 2 has a demo out on PlayStation 4 and Xbox One. There is also a demo out on PC, but it must have been out for a while.
The demo on consoles features all the graphical enhancements if you have a Xbox One X or PlayStation 4 Pro, and the PC demo has all of the VR features.
