Quick and easy breakfast ideas for busy mornings

   There is nothing better than waking up to a smell of fresh coffee and a delicious Breakfast. I am such a brunch lady, but there is literally no time to go out during the week. The plan is to stop snoozing and get out of bed, make some coffee and nutritious breakfast, and have an amazing day. Are we on the same page? I am sharing some of my favorite breakfast foods that help me to start the day right.  
Baked Oatmeal with fresh berry compote
For Oatmeal
Ingredients:

– Bob’s Old Fashion Rolled Oats, cinnamon, walnuts;
– Milk (I use SO delicious vegan coconut milk), vanilla, 1 egg, honey/maple syrup;
Preheat oven 400 F. In large bowl combine oats, cinnamon, and walnuts. (Add brown sugar if needed). In another bowl whisk egg, milk, vanilla, and maple syrup. Spoon into a greased skillet, and bake for 40 minutes.
For berry compote
Ingredients:
– 3 tablespoons of unsalted butter;
– 3 cups of fresh berries of your choice;

– 2 tablespoons of Brown sugar (or honey)
– Lemon zest.
Melt butter in skillet. Stir in brown sugar until dissolved. Add berries and lemon zest, and stir for 3-4 minuted until berries are warm and the juices begin to be released. 

Top baked oatmeal with berry compote and serve warm! (I usually take time to cook it in advance, and  reheat everything in the morning).
Baked eggs in Avocado   
I preheat my oven to 400 degrees F and crack the eggs in the bowl. Then I remove just a little of avocado from each avocado (if they are too small) and gently spoon egg yolks into avocado holes. I add some goat or Parmesan cheese and season with crushed red pepper and parsley. Gently place avocados in the oven for 15 minutes, make my coffee and enjoy my breakfast.  
Whole Wheat toast with avocado and capers   
or  
Whole wheat toast with salmon, avocado, cucumber (adding cream cheese for him and capers for me):  
I just toast my bun and slice some avocado, add capers and sometimes smoked salmon. Capers will add a great flavor and the saltiness I like.   
 
Flour free pancakes  
†This is a great start of the day! I just love, love, love pancakes, but sometimes flour is not the best idea (especially after Sunday brunch ;). So I just came up with the alternative that wouldn’t affect the taste of original American pancakes. My recipe is available here.   
 
Lox Eggs Benedict   
This is my favorite breakfast/brunch option ever. And the best part of it is that my hubby is the one who always cooks Lox Eggs Benedict. He follow this recipe  – it always works for us. 
 
Chia Pudding   
Chia seeds, almond/coconut milk, and fresh fruits become a great breakfast. I combine ¼ chia seeds with 1 cup of milk and 1 tablespoon of light agave nectar, mix well and let it set in the fridge overnight. In the morning I just add some fresh fruits and am ready to go!  
 
Yogurt/Oatmeal with Fruits and granola   
This is “no time at all” kind of deal. It’s easy and fast to prepare, makes you full and happy. And saves some time for the road.   
 
Whole wheat bagels
I love bagels and I surely enjoy them for breakfast. Toasted, with avocado and smoked salmon, or peanut butter and jelly – they taste amazing with coffee. Make sure you get the fresh once to have a wonderful start of the day!
