Cooking with local Umbrian produce

It is such a pleasure to Celebrate the seasons of this diverse region and what better way than with Food.   I am always reminded of how lucky we are to have at our fingertips a wealth of organic produce and responsible passionate growers and producers - including our own organic orto.  One of the nicest ways to celebrate is being able to prepare meals for guests. Simple, no-nonsense food.  The Umbrian table represents the love of seasonal food, with each particular variety being celebrated during it's often very short season. I love nothing more than showcasing the best local ingredients.

Roasted Spatchcock with lemon, bay and thyme




A meal of simplicity and flavour prepared for guests. Locally sourced free range poultry, fresh organic vegetables from the orto.   A robust Montefalco Rosso and a dessert of baked pears in vintage balsamico served with home-made cantucci and a glass of fine Moscato.  An antipasto plate usually to start.  Basta!
