Recipe for Indonesian Meatballs Soup Bakso

Bakso is one of the more popular dishes in Indonesia. Even though it’s a warm country, the Soup dish itself is considered as street food that you must try. Try the best food in (Bali) Indonesia. Perhaps due to pandemic or other future circumstances you can’t go, but that doesn’t mean you can’t eat it. I share with you now a recipe that will make your taste buds travel to Bali.

Bakso Ingredients

There are 2 separate things you need to make for bakso: The soup and the meatballs.

For the soup you need:

  • 2 pcs beef ribs
  • 5 cloves of garlic
  • 3 pcs of candlenut
  • 1 tsp of pepper
  • 2 tsp salt
  • 1 tsp beef broth ( optional)
  • Vermicelli or Noodles
  • Green onion leaves

For the meatballs you need:

  • 400 gr beef
  • 100 gr sago starch/ tapioca starch
  • 2 tsp gelatin starch
  • 6 pcs ice cubes
  • 1 egg
  • 1 tbs fried onion
  • 1 tbs fried garlic
  • 5 cloves garlic
  • 1/2 tbs salt
  • 2 tsp pepper
  • 2 tsp sugar
  • 1 tsp beef broth ( optional)

Step 1: Grinding the paste

On the stone grinder (pestle) crush the garlic, candlenut, pepper, salt to a paste, like on the picture. This paste will be required to make the soup for Bakso.

Step 2: The soup

In a pan with water add the paste. Then add the beef ribs. Boil this for 40 minutes. So now we got some time to do the next step while the soup is boiling.

Step 3: Indonesian meatballs in the making

To make it easy, I am using a blender. Add the beef, ground garlic, fried garlic, fried onions, salt, pepper powder, sugar, broth and egg in the blender.

Blend this until everything is well mixed. Add the tapioca starch icecubes and agar starch. Blend it to mix it well.

We did not blend everything in once, in order to put less strain on the machine.

Boiling the meatballs

To make bakso balls, squeeze the meat in one hand and use a spoon to separate it from the rest.

Boil the balls in water until they start floating. When the meatballs float it means they are ready and cooked. You can then take it out of the water.

Note that we didn’t cook this in the soup itself.

Step 5: Serving and eating

Ready a plate with some pre-cooked noodles, vermicelli, some green vegetable of choice. Add the boiled bakso.

You can also fry the bakso it makes a great taste and texture. I prefer half and half, so I can have both and enjoy that in my soup.

When your bowl is ready, add the soup. It’s ready to eat! Enjoy your Bakso!

Recipe Instructions:

Collect ingredients: Collect the ingredients that you want to use. Some are optional and if you cannot get everything it's ok.

Grinding using the pestle: Crush garlic, pepper, salt and candlenut until it becomes a mush

Make the Bakso Soup: Add the mush you made in previous step with beef ribs in water. boil this for 40 minutes

Indonesian Meatballs: Use a blender and mix beef, ground garlic, fried onions, egg, pepper powder, salt, sugar and broth. When this is well mixed, add icecubes, tapiaca starch and agar starch. also blend this in the meat mixture

Boiling the Meatballs: The meatballs will be boiled in another pan in water. Make balls from the meat mixture that was made in the blender. I use my hand and squeeze out the meat and with a spoon I then cut it off to make an Indonesian meatball

Serve and eat: In a bowl have some garnishing ready and add the meatballs. Pour the soup on top.

TIP: you can serve this with noodles, vermicelli and some extra green vegetables. Enjoy this tasty dish from Indonesia
