If you have been to Japan or simply visited and Japanese bakery, you would probably have come across these pretty sandwiches known as Fruit Sando or Fruit Sandwich. They are made of three simple ingredients – bread, fruits and cream and usually eaten as a snack or breakfast.
For a more authentic version, use Japanese milk bread or Shokupan, which is more fluffy and stringy in texture, so that the bread does not tear or break apart easily due to lack of elasticity when stuffed with cream and fruits. Make sure to use ripe and sweet fruits which are in season, and refrain from using citrus fruits to prevent the sandwich from turning watery.

Ingredients: (serves 1)
– 2 slices of soft white bread
– 100ml of chilled heavy/whipping cream
– 1 tbsp of sugar
– 6 medium sized strawberries (or any fruits of your choice)
– hand mixer
– mixing bowl
– cling wrap
– chopping board
– sharp kitchen knife
Pick similar sized strawberries and wash them thoroughly. Remove the stems of the strawberries.
In a mixing bowl, add the heavy cream and sugar. Beat the mixture until stiff peaks form.
Slice off the crusts of the bread. Line cling wrap on the counter and place the bread on top. Spread a layer on cream on both pieces.
Arrange the strawberries neatly on one piece of bread. Take note of the direction of the cross section later. Top evenly with more cream and place the second piece of bread over.
Wrap the sandwich tightly using the cling wrap. Use a marker to mark the direction of the cut. Place the sandwich in the refrigerator for about 30 minutes to set.
Using a sharp knife, slice the bread in the direction indicated in one motion (do not slice in zigzag motion). Serve immediately.
