Get Hooked on the Mouthwatering Magic of Butter Chicken

Butter Chicken is a popular Indian dish made with tender chicken pieces marinated in a spiced yogurt mixture, cooked in a creamy tomato-based sauce with butter, and flavored with aromatic spices.

Ingredients for Butter Chicken

For the marinade:

  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/2 cup plain yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon grated ginger
  • 3 garlic cloves, minced
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt

For the sauce:

  • 4 tablespoons unsalted butter
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon grated ginger
  • 1 teaspoon garam masala
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 can (14 ounces) crushed tomatoes
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Optional garnishes:
  • Fresh cilantro, chopped
  • Sliced green onions
  • Lime wedges

Instructions for Butter Chicken

  1. Preheat oven to 400°F (200°C).
  2. Heat a large skillet over medium-high heat. Add olive oil and chicken breasts to the skillet, and cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken breasts from the skillet and set them aside on a plate.
  3. Reduce the heat to medium, and add butter to the same skillet. Once the butter has melted, add garlic and cook for 1-2 minutes, or until fragrant.
  4. Add salt, black pepper, paprika, oregano, basil, and thyme to the skillet. Cook for 1-2 minutes, or until the spices are fragrant.
  5. Pour chicken broth into the skillet, and stir to scrape up any browned bits from the bottom of the skillet. Bring the mixture to a simmer and let it cook for 2-3 minutes, or until the sauce has reduced by about half.
  6. Add heavy cream to the skillet, and stir to combine. Bring the mixture to a simmer and let it cook for 2-3 minutes, or until the sauce has thickened.
  7. Add Parmesan cheese to the skillet, and stir to combine. Let the cheese melt into the sauce.
  8. Add the chicken breasts back to the skillet, and spoon the garlic butter sauce over the top of the chicken.
  9. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the chicken is hot and bubbly.
  10. Garnish with chopped parsley, and serve with your favorite sides, such as rice, vegetables, or bread.
