- 250g of butter, softened
- 2/3 cup (80g) of custard powder
- Half cup (80g) of icing sugar
- One tea spoon of vanilla extract
- One and a half cups (225g) of plain flour
- Extra Icing sugar, for dusting
- 125g of butter, softened
- One and a half cups (240g) of icing sugar
- 1/4 cup (60ml) of passionfruit pulp

- To get the best results, you might consider using the Breville Bakery Boss® Stand Mixer.
- Preheat your oven to 160°C fan forced. Using baking paper, line two baking trays. Assemble mixer with the scraper beater and the large mixer bowl. Add sugar, vanilla, and butter to a bowl. Turn the mixer Slowly to LIGHT MIXING setting and beat for like 1 minute.
- Increase the speed to CREAM/BEAT setting and beat for like 3-4 minutes until pale and creamy. Reduce the speed to LIGHT MIXING setting; add custard powder and flour, then beat until just combined.
- Roll heaped tea spoons of mixture into balls. Place them onto prepared baking trays. Slightly press with a floured fork to flatten. Bake for like 15-18 minutes or until firm to touch. Before transferring to a wire rack to cool completely, allow it to cool on trays for 5 minutes. Repeat this with the remaining biscuit mixture.
- Firstly, assemble Mixer using Scraper Beater.
- Combine the butter and icing sugar in the mixer bowl. Turn the mixer slowly to AERATE/WHIP setting and beat 1 minute, increase the speed to CREAM/BEAT setting and beat further for like 1-2 minutes until thick and pale. Fold through the passionfruit pulp.
- Spread half the biscuits with passionfruit filling and sandwich together with remaining biscuits. Dust it with an extra icing sugar just before serving serve.
