- Two table spoons of whole egg mayonnaise
- Two tea spoons of finely chopped chives
- One table spoon of Greek style yoghurt

- Eight Eggs, hard boiled
- 150g of green beans, trimmed
- Two chicken breasts, trimmed
- One small French baguette, sliced
- One cup of finely grated parmesan
- Two small cos lettuce, leaves separated, rinsed and dried
- Half small red onion, finely sliced
Dressing
- Mix all the dressing ingredients together along with one table spoon of water until fully combined and keep it aside.
- In a large saucepan of boiling water blanch the green beans then plunge into iced water, drain, sliced length ways and set aside.
- Poach the chicken breasts until cooked through in the same saucepan, remove and allow it to cool.
- Heat an oven grill to high, lay out the slices of baguette on a baking tray and sprinkle over parmesan. Grill until melted and golden.
- Slice the chicken to serve. Arrange it on serving plates with cos leaves, beans, red onion, quarters of hardboiled egg and cheesy baguette slices. Drizzle with dressing.
- Alternatively, serve the dressing on the side.
