Breakfast Fit For A Nawab And A Commoner

A record of Nihari is pure joy on a cold Sunday morning. Or a Monday morning. Or in the evening. In principle nihari is the comfort food that is perfect for every moment of the day.

Blind date

I was introduced to nihari, a slow-cooked beef stew, years ago when my taaya jee me and my cousins Akbari Road in Anarkali. When I wondered if I had ever had it nihari and then discovered that I did not have it, he remarked in Punjabi: "What have your parents done all this time?" He seemed almost offended how the first two minutes I could not even register the name NIHARI. That is the side effect of growing up in Defense. Anyway, we quickly came to Waris Nihari, a busy and busy restaurant. The air was filled with aroma, herbs and ginger, and although skeptical before I arrived, I liked what I smelled. Food was ordered and I waited in anticipation of what was to come.

A love story

A little later, food was served. Steaming rotis with a nice, almost red masala and a huge piece of beef in the middle. I broke a piece of bread and dipped it in the masala to get a taste. My eyes were amazed with surprise and I said WOW a million times in my head. I felt a sudden explosion of flavors in my mouth. It was tough, but I got used to being raised in a house in Punjabi. I also liked how greasy it was, and the masala itself so thick. The meat slipped away effortlessly, so that my struggle with the breaking of the meat disappears. My taaya jee gave me the assignment to add some chopped hari mirch lemon and ginger to the plate, I was not too impressed with the ginger, but the chili and the lemon juice made the difference. I was blown away, baking.

From that day onwards I that I had to have it again, and so I put my mother to the task. The dish is now a normal one at our home.I couple mine with a few fresh, roghni naan and my parents with khameeri roti I love mine in beef, but you can certainly have it in sheep or chicken.

Review

Further on from how I got acquainted with nihari I would like to talk about his rich history: the South Asians who we are, our lives revolve around food. It was also no different for our ancestors, they gave us some of the best in food around the world today.

The name of the dish is derived from the Arabic word "nahar" wa t means day or day. Many people believe that the dish was developed in the Jamia Mosque muhalla of Delhi and was served on nawabs after Fajr prayers. There are also people who dispute this claim and say that the stew is actually invented in the royal kitchen of Awadh's Nawab. What is true, one thing is certain, the households of shahi loved their nihari .

Later, the popular royal breakfast became very common in the working class. Nihari, with all its proteins, was supposed to be a source of energy and heat (for the winters) and would also reduce the desire for workers for the nawabs. The legend says that it is also a hakeemi healing that is widely known to treat fever, cold and sinus problems. WOAH!

Time immemorial

References of many immigrants from Delhi traveled to Karachi and Lahore and established their own nihari restaurants and some even exist today. This dish, which normally takes 6-7 hours to stew and prepare, is still served in those restaurants in the early morning. Chances are you will not get a plate of hot, tasty nihari if you end there at 11 o'clock. If you ask one of these restaurant owners, each would have their own romanticized story of the historic splendor of how their great-great-grandfathers cooked and served the dish all their lives. It is indeed a treat to listen to them and to continue their legacy and love for nihari .

Nihari is still being cooked in a majority of households (thanks Shan and national masala & # 39; s!) In Pakistan today. It is served in modern restaurants and even around the world for expats and foreigners.
