You Are What You Eat: Thai Cucumber Salad

Ingredients

  • 2 tsp. Bee Wild Wildflower Honey (to taste)
  • Large Organic Cucumbers, sliced into 1/2 in pieces
  • 1 Small Organic Yellow Onion, finely chopped
  • 2 Organic Jalapeno Peppers, finely chopped
  • ¼ Cup Organic Cilantro, coarsely chopped
  • 1 Tbsp. Good Quality Organic Salt
  • ¼ Cup Rice Wine Vinegar
  • ½ Cup Chopped peanuts







Instructions

  1. Sprinkle the salt over the cucumbers, toss, and put in a colander. Let them drain over the sink for 30 minutes. Rinse with cold water and thoroughly pat dry.
  2. Put the honey and rice wine vinegar in a jar with lid and shake well.
  3. Toss the cucumbers, jalapenos and cilantro in a bowl with the honey/rice wine vinegar.
  4. Refrigerate until cool and top with the chopped peanuts.
