Ingredients
- 2 tsp. Bee Wild Wildflower Honey (to taste)
- Large Organic Cucumbers, sliced into 1/2 in pieces
- 1 Small Organic Yellow Onion, finely chopped
- 2 Organic Jalapeno Peppers, finely chopped
- ¼ Cup Organic Cilantro, coarsely chopped
- 1 Tbsp. Good Quality Organic Salt
- ¼ Cup Rice Wine Vinegar
- ½ Cup Chopped peanuts
Instructions
- Sprinkle the salt over the cucumbers, toss, and put in a colander. Let them drain over the sink for 30 minutes. Rinse with cold water and thoroughly pat dry.
- Put the honey and rice wine vinegar in a jar with lid and shake well.
- Toss the cucumbers, jalapenos and cilantro in a bowl with the honey/rice wine vinegar.
- Refrigerate until cool and top with the chopped peanuts.
