Oh man, supper tonight was this happy coincidence when you have nothing thawed out to make and nothing sounds good. It might want to be retitled: Potato Soup, or Sam to the Rescue. I just happened to have all the ingredients to make this. It comes from Just a Bunch of Recipes.
What did I learn from this recipe?
The soup Recipe calls for diced onion. Amazingly enough, I didn't have any onions at all, which surprised me, because anymore with cooking from Sam's book, I keep at least one at all times now. I decided to substitute some diced celery instead.
I cooked it up the same way the onion would have been softened, and I learned that celery doesn't soften like that. Sure, it does soften some, but it doesn't cook down. However, I realized it was still a very good substitute, and I still liked the slight change in texture from the rest of the ingredients.
Oh...my...God...MAKE THIS SOUP. This recipe is definitely a keeper!
