Maharashtra Day is celebrated every year on May 1 to commemorate the establishment of Maharashtra as a separate state in 1960. This year marks the 22nd anniversary of the Maharashtra state. This day is celebrated to honour the spirit and rich culture of the Marathi and Maharashtrian peoples and what’s better than celebrating with the cuisine of Maharashtra.

Maharashtrian cuisine includes mild and spicy dishes. It is much more than Misal Pav, Vada Pav, or Ragda Pattice. Here are a few delicious Maharashtrian dishes that represent the best of Maharashtra cuisine!

  1. Bharli Vangi

Small brinjals are stuffed with a spicy peanut masala and then cooked in a spicy onion tomato stew in this Maharashtrian-style stuffed brinjal recipe. This Maharashtra culinary dish has the potential to breathe new life into this otherwise boring vegetable.

Sol Kadhi, or kokam in coconut milk, is a traditional Maharashtra food dish. Sol kadhi is a delicious pink-colored drink that is given as an appetizer and is praised for its digestive powers!
