  • 11/2 cup whole wheat flour
  • 1tsp baking powder
  • Pinch of salt
  • 2tsbp sugar
  • 2 eggs, beaten
  • 2tsp chia seeds
  • 1tsp vanilla extract
  • 1 1/2 cup milk

How to:

  1. Put all the dry ingredients in a large bowl and mix well.
  2. Make a well in the center and add the beaten eggs and milk.
  3. Whisk until it forms into the pancake batter.
  4. Let the batter rest for 5 minutes, allowing the chia seeds to gel.
  5. Place a non-stick pan on medium flame.
  6. Butter the pan and pour the batter to make pancakes.
  7. These pancakes will not form bubbles at the top, so flip them when the bottom turns golden brown.
  8. Add your kid’s favorite toppings such as banana, strawberry or some chocolate syrup.

  • 1/2 cup all-purpose flour
  • 2tsp baking soda
  • 1tsp salt
  • 2 cups coconut milk
  • 2 eggs
  • 2tbsp maple syrup
  • 2tbsp olive oil
  • 1/2tbsp vanilla extract
  • 2tbsp coconut oil

How to:

  1. In a large bowl, mix the flours, baking soda, and salt.
  2. In another bowl, add coconut milk, beaten eggs, maple syrup, olive oil, and vanilla extract and whisk.
  3. Add the wet ingredients to the dry ones and stir until a smooth batter is formed.
  4. Heat a griddle on medium heat, grease it with coconut oil and pour the batter in the desired size.
  5. Cook for 2-3 minutes on each side and serve with some sliced bananas and maple syrup.
