Tropical Overnight Oats

If you’ve been following my blog in recent weeks, you know I’ve been eating a lot healthier since the new year in hopes to lose some weight and become a healthier person. I had really let myself go during my recent pregnancies and in my post-partum months, stuffing my face with anything I could get my hands on, just because it was easy and convenient. Most of my days were filled with eating candy, potato chips, take-out food… basically, junk.

I got tired of feeling so unhealthy, lethargic and overweight, so I started eating nutritious meals and snacks throughout the day, and getting at least 30 minutes of exercise every day.

After just three weeks of this lifestyle change, I am feeling better than ever! I have more energy, don’t feel so tired anymore and I’ve even lost a few pounds and inches off my waist.

A few things that have helped me stick with this lifestyle change are drinking more water throughout the day, joining a weight loss support group, scheduling time for exercise and having quick healthy snacks around the house, like Sunsweet Dried Fruit.

I have always loved Sunsweet products, and they have recently added Philippine Green Mango and Thai Coconut Chip to their line of Philippine Tropicals. These two new flavors are a perfect compliment to their previously launched Philippine Mango and Philippine Pineapple.

I recently had the opportunity to try out all of these great dried fruit products from Sunsweet, and I am hooked!

The pineapple is juicy and delicious, and makes you feel like you are eating real chunks of pineapple! The green mangoes are picked early, just as they begin to ripen and they are packed with a delicious tanginess that will leave you craving your next bite. The Marabella mangoes are thick, soft pieces with a sweet floral taste. 

Sunsweet Philippine Tropicals are sourced from unique microclimates to deliver an absolutely amazing taste of the tropics — no matter where you are in the world! These succulent little bites of paradise really help to calm my sweet tooth, without making me feel guilty.

The Thai Coconut Chips have a perfectly satisfying crunch to them, combined with creamy vanilla notes, and help me to stay far away from those bags of greasy potato chips.

I’ve been on an Overnight oatmeal kick lately, experimenting with different flavor combinations, and I thought it would be nice to try making Tropical Overnight Oats using the Sunsweet products I received.

I really love Overnight Oats because they are super easy to whip up at night, and in the morning you have a healthy, nutritious and filling breakfast ready to go when you are. Overnight oats are so versatile, and you can really put any kind of flavor spin you want on them. Out of all of the flavors I have tried, I honestly think these tropical overnight oats are my favorite. They are so delicious!

Here’s what you need to make these tasty Tropical Overnight Oats:

INGREDIENTS:

  • 1/4 cup steel cut oats
  • 1/4 cup Greek vanilla yogurt
  • 1/3 cup coconut milk
  • 1 ripe banana (mashed until liquified)
  • 1/4 cup assorted diced Sunsweet Tropicals dried fruit (Philippine Pineapple, Philippine Mango, Philippine Green Mangos, Thai Coconut Chips)

DIRECTIONS:

Mix oats, yogurt, mashed banana and coconut milk in a container. Cover with a lid and give it a good shake to mix everything together. Place in refrigerator overnight. When you are ready to eat your oats, top with dried fruit mixture. *

*You could also mix the dried fruit into the oats before refrigerating if you would prefer. I tried the recipe both ways, and they were both great!
