Breakfast for dinner?! Can you really do that?
The answer to that is a resounding yes! Maybe it’s my Jersey upbringing and my fascination with diners where you can get breakfast food at any time of day. Or maybe it’s just that it’s a meal that I can guarantee that my kids will eat without complaint. Either way, breakfast for dinner is a regular occurrence in our house.
This doesn’t mean, however, grabbing bowls of cereal and milk (although I will admit to having done that in college). Rather, breakfast for dinner means a meal with some of the yummy breakfast and brunch foods that I honestly don’t have time to make in the morning.
There is one added bonus from this meal in our house. The leftovers become breakfast!
