Linda’s Blintz Souffle’

This Dish is a staple of our friend Linda’s table. It combines delicious Blintzes with a yummy eggy souffle’. Our go to is to combine cheese blintzes with cherry blintzes but you can put in your own favorites. We tend to use Golden Blintzes as you can almost always find them at the local grocery store in the freezer section. I’ve made my own in the past and might go back to that in the future.

This makes for a great Sunday brunch dish or can be part of a breakfast for dinner menu.

Ingredients

2 packages of blintzes

4 eggs

1 1/2 cups of yogurt

1/4 cup of sugar

1 tablespoon of vanilla

2-3 tablespoons of orange juice

Cinnamon to taste

Instructions

Preheat the oven to 350 degrees.

Grease a 9×13 Pyrex dish. Place the blintzes side by in the dish, squeezing in as many as possible. If you are using multiple flavors, be sure to mix them up as you put them in. It tastes better if you can get a forkful of more than one filling in a bite.

In a separate bowl, whisk together eggs, yogurt, sugar, vanilla, and orange juice until fully combined.

Carefully pour the egg mixture over the blintzes.

Sprinkle the cinnamon over the top of the mixture.

Cook for 30 to 45 minutes. The egg mixture should be firm and not runny.
