the quickie dinner: kale light delight

Kale may have once been considered a fad; a "trendy" Green that was a star smoothie ingredient and synonymous with "being healthy". In my opinion, it's way beyond a fad. In fact, I find Kale to be a prestige green and my new, favorite quote is quite apropos: "popularity is the slutty little sister to prestige" (Birdman, the movie). Kale, you are my prestige green and star of my quickie dinner dish.

Delicious Kale Light Delight!

This dinner is savory, but not heavy and packed with protein. Perfect for repairing mind and body after a hard day at the office, the gym, or managing the crazy schedules of different family members. Besides the star kale, this dish also features veggie chik'n, onions, and egg whites. I love quick stir fry dishes and this was about ten minutes all in. This is also a fantastic base that you can build on - add in more veggies, greens, spices, and even grill some fruit like grilled pineapple or apple slices.

Ingredients:

  • Organic Olive Oil to coat the pan
  • Hearty Kale leaves
  • Veggie Chik'n (leave off the sauce)
  • Organic Egg Whites
  • Organic Yellow Onion
  • Pepper and Salt
Heat pan and first add onion and kale and cover; after those two ingredients have heated up, add the veggie chicken and continue cooking. Wait about 5-7 minutes and add a thin layer of egg whites. Continue to cook for another five minutes and voila, deliciousness is ready to go!
